My name is Michael Socha and I am the author of this blog. I have been dealing with coffee for over 15 years, and for 11 years I have been running the Single Origin coffee roastery. I buy, I try, I compare. I try to get what’s best in the beans in various ways: taste, aroma, even appearance. We all do it.

We buy various coffees, we are looking for the one-and-only one that will be perfect for us. However, this is not an easy process. Coffee is one of the most important products on the world’s commodity exchanges. In terms of the value of turnover, it is even in second place. Second place! Many of us may think: the first, you know – crude oil, but the second – coffee? More like natural gas, maybe iron ore or some other metal… And yet, raw coffee beans are the second largest commodity in the world in terms of value of turnover. Annually, over 7 million tons of them are sold.

Coming back to the topic, how to find beans for yourself among such a huge number? How to brew them? Maybe just in an automatic coffee machine, or maybe try more and more popular alternative methods? Recently, brewing devices are very simple and fantastic to use (in terms of the ease of use and the obtained effect), such as the Aeropress or the Chemex.

You’ve probably also wondered how to make a cappuccino or a latte at home, but not from a purse (let me write briefly: coffee from a teabag – ha ha), only real ones, like in a good cafe? I can assure you that it can be done at home, and you don’t need an expensive coffee machine. Enough… that’s it, I have to write about that too.

I hope you have been interested in this short introduction. I have a lot of topics in my head that I would like to share with you. I invite you to visit this blog regularly. We will try different coffees. We will brew them in an automatic coffee machine and play with coffee toys, which, as it turns out, can make great coffee. We will also visit my roaster and see how ordinary, raw Arabica beans with about 15 aromatic and flavor compounds can be used to obtain burnt beans with over 700 of them!
